Does anyone know where I can find a list of all the sponge plugins that are available, if of course such a list exists
Look up and left. Hover on the Sponge logo and a drop down list will appear. Follow the one that takes you to Ore - which is the official Sponge Plugin Repository. Most plugins can be found there.
