For starters, your SpongeForge build is severely out of date. Second, it looks like something else is modifying the entity tracker (which is a big Nono), but the stack trace doesn’t look like any particular mod is modifying it, so it might be a mod/plugin modifying it asynchronously and the main server thread getting that exception. No real way to catch that except try updating some of the mods or searching if some mods were reporting the same issue.
